All these recipes use sour milk or cream, “When you have three children,” explains Mrs. Merrill Coffin, 14 Pershing Avenue, “there’s bound to be milk left over to sour and I’m too Scotch to throw it away.” Consequently, she began to look for ways to use it up and collected these recipes. Those three children, by the way, are Sandy, 7: Tom, 4 and Scott, six months. Mrs. Coffin is president of Xi Alpha Theta chapter, Beta Sigma Phi; and a member of Bethel Lutheran Church and the Persell School P.T.A. Her hobbies include sewing, knitting, bowling, roller skating and raising African violets.
BANANA CAKE
- 1-1/2 cups sugar
- 2 tbsp. butter
- 2 eggs
- 2 mashed ripe bananas
- 6 tbsp. sour milk
- 1 tsp. soda
- 1-3/4 cups flour, sifted
- 1 tsp. vanilla
- 1/2 cup chopped nuts
Dissolve soda in sour milk and mix ingredients in order given. Bake at 350 degrees in 9 inch square pan for 45 minutes. Frost with butter frosting.
SOUR CREAM COOKIES
- 3 cups flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1/3 cup shortening
- 2 cups brown sugar
- 2 eggs, well beaten
- 1 tsp. vanilla
- 2/3 cup thick sour cream
Sift flour, soda, salt and spices. Cream shortening and sugar. Add eggs and vanilla. Mix well. Add dry ingredients alternately with sour cream. Drop by teaspoon on greased baking sheet. Bake at 350 degrees 12 minutes. Makes about 50 cookies.
BROWN SUGAR COFFEE CAKE
Blend:
- 2 cups brown sugar
- 3/4 cup butter or shortening
Reserve half of above for Topping.
Add:
- 1 cup sour milk or cream
- 1 egg
- 1 tsp. each salt, soda and baking powder
- 2 cups flour
- 1 tsp. vanilla
Bake at 400 degrees 30 minutes in 9 inch square pan. When baked and still hot, add topping.
TOPPING:
- Add 2 tbsp. flour and 1 cup chopped nuts to sugar and butter mixture.
CHOCOLATE CAKE
- 1 cup sugar
- Shortening size of an egg
- 1 egg
- 1 cup sour milk or cream
- 1 tsp. soda
- 1-1/8 cup flour
- 1/2 cup cocoa
- 1 tsp. vanilla
Dissolve soda in milk and mix in order given. Bake 45 minutes at 350 degrees in 8 by 8 inch cake pan. Frost with a light chocolate butter frosting.
ORANGE CAKE
- 1 cup g
- 1 tbsp. butter
- 1 egg
- 1 cup sour milk
- 1 tsp. soda
- 1 cup raisins
- 1 orange (California)
- 1/2 cups flour
Squeeze juice from orange end mix with 1 extra cup sugar. Let stand while cake bakes. Cream butter and 1 cup sugar. Add egg. Add milk, soda and flour. Grind orange peel and raisins together. Add to cake mixture. Bake at 350 degrees 25 to 30 minutes. Pour juice and sugar mixture over cake while it is still hot, being careful to use only enough juice to glaze cake, as some oranges are so juicy. Can be served warm or cold topped with whipped cream.
